Dim Sum literally translated means “ touch-hearts”; small treats that touch the heart. Dim Sum can be prepared in many different ways: steamed, baked, grilled, stir fried, and deep fried. The portions are bite-sized, and they are served in small quantities, usually three to four pieces in a plate, so that the diners can enjoy a variety of plates.
People like to drink tea with Dim Sum, that what they call ”Yum Cha”.
In Cantonese “yum cha” (tea drinking) ritual, varieties of Dim Sum (translate as ‘touching hearts”) are served one after the other, along with one’s favorite tea, be it Oolong, Jasmine, Dragon Well, Iron Buddha, or green tea. The quantity and size of each are kept small _ the delicacies are served in tiers of steamers or small to medium-sized plates_ so that many different varieties could be sampled.
In Hong Kong Yum cha is often a mid-morning brunch that takes care of both breakfast and lunch in one meal. Business people often like to strike deals over a relaxed mid morning yum cha brunch, family members like to gather in the weekend for yum cha.
